Did you know that the “nacho” snack as we know today was invented in Piedras Negras, Coahuila Mexico just over the border from Eagle Pass Texas, in 1943 by Ignacio “Nacho ” Anaya. In 1943, the wives of U.S. soldiers stationed at Fort Duncan in nearby Eagle Pass were on a shopping trip in Piedras Negras . Some how the ladies ended up at the restaurant where Ignacio worked after it had already closed for the day. It was then that Ignacio “Nacho” quickly invented a new snack for them with what little he had available in the kitchen which consisted tortillas and cheese. Mr. Anaya ingeniously cut the tortillas into triangles, fried them, added shredded cheddar cheese, and topped with pickled jalapeño slices, known today as nacho jalapeño slices, and served them to the ladies. It was at that moment that the snack became a big hit! That is how the famous nachos that have become world wide famous were born. Mr. Ignacio Anaya died in 1975. In his honor, a bronze plaque was erected in Piedras Negras, the town where the nacho was invented. In his honor October 21 has been declared the International Day of the Nacho.
